Ingredients
  

  • ½ medium onion finely chopped
  • 1 medium tomato finely chopped
  • 2 tablespoon cilantro chopped fresh
  • ¼ teaspoon salt or to taste
  • 2 tablespoon olive oil
  • 8 slices French bread Italian bread, sandwich bread, or small rolls halved
  • 1 cup mozzarella shredded
  • 4 slices ham chopped or torn
  • 4 slices deli bologna chopped or torn
  • 2 tablespoon olives sliced

Instructions
 

  • Preheat the oven to 350°F and line a baking sheet or lightly grease a baking dish.
  • Finely chop the onion, tomato, and cilantro. Add them to a mixing bowl, season with the salt, and drizzle in 1 tablespoon of the olive oil. Stir well until everything is evenly combined and juicy. If the tomato releases a lot of liquid, let the mixture sit for a minute and spoon off just a little excess so the bread does not get soggy.
  • Arrange the bread slices on the baking sheet or baking dish in a single layer. Drizzle the remaining 1 tablespoon olive oil lightly over the tops so the bread can crisp and turn lightly golden in the oven.
  • Spoon the tomato mixture evenly over each piece of bread, spreading it gently so every bite gets some of the topping. Do not press down too hard, or the bread may lose some of its texture.
  • Top the bread with the shredded mozzarella, then add the ham, deli meat, and olives. You can layer every toast the same way or vary the toppings slightly if you want a mix of flavors.
  • Bake for about 10 minutes, or until the cheese is melted and the bread is lightly golden and crisp around the edges. If needed, broil for the last 1 to 2 minutes very carefully for a little extra color.
  • Remove from the oven and serve right away while the cheese is still hot and the bread is crisp underneath.
